1 each 6 large, ripe tomatoes
1 each 1 tablespoon salt
1 each 1/4 tablespoon black pepper
1 each 1/4 tablespoon dried thyme or a few fresh leaves, chopped
1 each 1/4 Cup finely-snipped parsley
1 each 1/4 Cup snipped chives
1 each 2/3 Cup oil
1 each 1/4 Cup tarragon vinegar
|* Boil tomatoes 5-7 minutes to loosen skin and peel.
* Cut crosswise in half.
* Toss seasonings together.
* Place tomato halves in a deep bowl, sprinkling each layer with seasonings and herbs.
* Combine oil and vinegar and pour over tomatoes, making sure all are coated.
* Cover and let marinate, chilled, for a couple hours.
