1 OZ pkg saffron rice mix
1 OZ can black beans
5 tablespoons lime juice
1 teaspoon chili powder
0.5 teaspoon ground cumin
2 tablespoons chopped fresh cilantro, garnishes: sliced green onions, etc
Cook rice per package directions and keep warm.

Meanwhile, drain beans, reserving 2 tablespoons of liquid.
Combine beans, reserved liquid, lime juice, chili powder, and cumin in saucepan. Cook over medium heat until thoroughly heated.
Stir in 1 tablespoon of cilantro.
Serve beans over rice; sprinkle with remaining cilantro.
Garnish if desired and serve.
